Golden Lentil Dhal with Coconut and Ginger

There’s something about a pot of lentils simmering that feels like medicine for more than just the body. The scent of garlic and ginger softening in oil, the golden swirl of turmeric turning everything sun-bright — it’s the kind of food that soothes the edges of a long day. This dhal is simple, hearty, and quietly healing. It’s one of those recipes that tastes like it’s taken hours, but in truth, comes together in under 40 minutes. Spoon it over rice, scoop it with flatbread, or enjoy it on its own — it’s comfort food that also happens to be good for you.

Ingredients

  • 250g red lentils, rinsed
  • 1 tablespoon coconut oil or olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2cm piece fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tin (400ml) coconut milk
  • 500ml vegetable stock
  • 1 fresh chilli, sliced (optional)
  • Juice of 1 lime
  • Handful fresh coriander, chopped, to serve
  • Sea salt and black pepper, to taste

Method

  1. Soften the base. Heat coconut oil in a large saucepan. Add onion, garlic, and ginger, cooking gently until golden and fragrant.
  2. Spice it up. Stir in turmeric, cumin, and coriander. Cook for 1 minute to release the aromas.
  3. Build the dhal. Add lentils, coconut milk, and stock. Stir well, bring to the boil, then reduce to a simmer.
  4. Simmer. Cook for 25 minutes, stirring occasionally, until the lentils are soft and the dhal is creamy. Add a little more stock if it thickens too much.
  5. Finish. Season generously with salt and pepper. Stir in lime juice for brightness.
  6. Serve. Spoon into bowls, scatter with coriander, and add fresh chilli if you like heat.
